I have a sausage kale and white bean soup I love and is easy so maybe make it on a day where you aren’t that motivated. 4 cups chicken stock (i don’t make my own stock a lot as we don’t have whole chickens a lot so use what you want) 1 lb sausage sliced- (I usually use a mild Italian, but a kielbasa would probably be good too) 1 large onion 7 cups cooked white beans (cannellini or great northern beans) 1 large bunch kale, strip the leaves from the stems salt, pepper and red pepper flake to taste Brown the sausage and sweat the onion Add all but 1 cup of the chicken stock to a pot, bring to boil Add the sausage and onion to the pot Put 3 cups beans and 1 cup stock in a blender or food processor and puree until smooth, set aside Put remaining 4 cups on beans into pot, let simmer for 2-3 hours About 30 minutes before you want to serve, add the bean puree to that pot 5 minutes before serving add the kale, once it is wilted the soup is ready to serve I grate some parm on top and usually serve with crusty bread
